WE COOK WITH AWARENESS AND RESPECT FOR THE PRODUCERS AND THE TERRITORY

The Ristorante Garden draws on networks of producers spread throughout Italy, striving to promote good, clean and fair food and safeguard the biodiversity of our territory. As part of the Chefs’ Slow Food Alliance, our chefs cook every day with products from farmers, ranchers, cheesemakers, fishermen, winemakers and artisans who produce with respect for the land and their animals. That is why in our menu you can taste dishes made with products that celebrate our territory, Slow Food’s thematic networks, such as Slow Beans, the Slow Food Presidiums and the ingredients listed in the Arca del Gusto.

Local products, Slow Food Presidiums and special ingredients

Among the Slow Food Presidiums most used in the creation of our seasonal menus are the Piedmontese Breed, Carmagnola pepper, Giant Rice from Vercelli and legumes of the Slow Beans soup. For the special menus dedicated to the events, we draw on an even more extensive network of producers to introduce you to many other Italian Presidiums such as Capocollo di Martina Franca, Castelmagno d’Alpeggio, Ramasinn del Monviso Valle Bronda or tonno di gallina using the Piedmontese blonde hen.
