A GOOD, CLEAN AND FAIR MENU THAT VARIES ACCORDING TO THE SEASONS

Designed by Chef Riccardo Venturini, our menu is inspired by the seasons and Piedmontese gastronomic traditions to best tell you the story of the territory of the Langhe and Roero. As an accompaniment to our dishes, we have created a precious wine list in collaboration with the Banca del Vino, a large wine shop that can be visited in the internal courtyard of our accommodation complex.

APPETIZERS

  • Piedmontese Fassona veal “La Granda”  with tuna sauce
  • Battuta di Piedmontese Fassona “La Granda”  tartare with Parmigiano Reggiano cheese and red sauce
  • Pea flan with Raschera cream and carrot chips
  • Asparagus coated in black sesame seeds with Amalfi lemon confit sauce and burrata
  • Spring harvest salad

FIRST COURSES

  • Hand-cut 40 yolks tajarin pasta with green asparagus
  • Plin ravioli with butter and sage
  • Giant Vercelli rice  with seared scallops and watercress
  • Parmentier with nettles and luvertin (the apexes of the wild hop plant)

MAIN COURSES

  • Seared ombrine with zucchini and basil sauce
  • Sliced Piemontese Fassona “La Granda” beef with potatos and baby spinach
  • Sambucano-style rolled lamb with colorful Polignano carrots
  • Piedmontese Fassona La Granda tongue Milanese-style with symbiotic salad
  • Sautéed vegetables
  • Selection of cheeses

DESSERTS

  • Panna cotta with  Chinantla Vanilla
  • Tiramisù
  • Millefeuille with pastry cream and strawberries
  • “Menodiciotto” Sorbets
